How we make it

At first glance and at first taste, a Caseificio Caramasche's Parmigiano Reggiano flake arouses a thousand feelings. Every shape is different from all the others, so that we can perceive with our senses its infinite peculiarities. The sensorial analysis starts from sight, which offers us various emotions and hues. The intensity of yellow increases with seasoning, a young cheese will be in a light yellow while a seasoned one will appear in a strong straw yellow. Another noticeable feature is the cheese's granular texture, which in a 24-month old Parmigiano Reggiano is more evident and, as time passes, we will more and more notice the appearance of white crystals: this is tyrosine, an amino acid released with seasoning.

To fully smell the scent of Caseificio Caramasche's 1559 Parmigiano Reggiano you can take a piece of cheese and split it, the scents change according to the seasoning: a touch of milk, butter, fresh grass, dried fruits and spices. When tasting it you will immediately perceive its grainy texture, its friability and even solubility. The more seasoned the Parmigiano wheel is, the more it will melt in your mouth. Moreover, there is a perfect balance between salty and sweet. A younger cheese will be sourer; a more seasoned one will also be slightly spicy.
